Introduction

Ingredients

1 lb of lean turkey italian sausage
1 can of fat free refried beans
1 can of diced tomatoes with green chiles or Rotel
1 can of enchilada sauce(I use mild)
4 Lo carb wheat tortillas (you can use other flour tortillas but will change values)
2 cups of cheddar cheese
1 cup of chopped onions
Directions
Brown italian sausage and add in the onions in while browning, after drained add in the refried beans and diced tomatoes and enchilada sauce simmer to warm
in a small baking dish (I used 8x11) spray bottom with Pam or any spray
Add two of the wheat tortilas then on top of that add the mixture you made then add cheese
Then do one more layer just as above
Wheat tortillas, meat mixture & top with cheese
bake @350 for about 30 minutes (maybe less depending on oven) till nice a warm through and cheese is bubbling.
You can add more cheese and tortillas for more layers, but this is calculated with only two layers
Also you can add sour cream and salsa on top for additional calories
You can cut smaller or bigger pieces for variation in calculations
