Ingredients

    1.5 lb Chicken Thighs trimmed, 5 thigh, bone and skin removed
    5 medium Carrots diced
    1Can Yellow Sweet Corn, drained
    1Cans Del Monte Diced Tomatoes w/ zesty mild chilies
    2 Cans Del Monte No Salt Added Diced Tomatoes
    1 can Goya Black Beans (rinsed)
    1/2 Jar Wegmans Roasted Red Pepper Salsa
    2 tsp Cumin

Directions

place all ingredients in crockpot, cook on low for 6-8 hours
1 tblsp corn starch mixed with cold water to thicken at end
Serve over rice

    My only comment is that 1,000+ mg of sodium is not "lower sodium". - 4/11/09

    Note that I did not say 'low sodium' however, if you were to use Del Monte's regular diced Tomatoes - rather than the 'No Salt Added' ones you add about 230mg/serving to this recipe - so it is "LOWER' than the regular version (Reg Tomatoes =875mg/can(X2), No Salt Added Tom = 175mg/can (X2))

    We had this yesterday, it was very good and will be part of our menu planning now. We served it over brown rice, but could have easily done without. Ended with enough to freeze another full dinner. - 3/16/10

    Very Good
    I made this an it was AWESOME...makes a huge amount though (we only have two people) so the next day we turned it into chili type dish. My DH loves it too and he is a picky eater! The first day we served it over brown rice! Thanks for sharing! - 6/17/09

    This was great. I did not use the cornstarch to thicken at the end and I used brown rice. My whole family loved it. - 6/11/08
