Ingredients

    1-1/3 cup uncooked orzo pasta
    1 can low sodium chicken broth
    1 cup water
    2 tablespoons olive oil
    1 tbsp minced garlic
    1/4 teaspoon crushed red pepper flakes
    3 skinless, boneless chicken breast halves - cut into bite-size pieces
    salt to taste
    1 tablespoon chopped fresh parsley
    2 cups fresh spinach leaves
    grated Parmesan cheese for topping

Directions

1. Add chicken broth and one cup of water to a pot, bring to a boil. Add orzo pasta, cook for 8 to 10 minutes, until al dente, or until orzo absorbs most of the liquid.


2. Heat the oil in a skillet over medium-high heat, and cook the garlic and red pepper 1 minute, until garlic is golden brown. Stir in chicken, season with salt, pepper, and paprika, and cook 5 minutes, until lightly browned and juices run clear. Reduce heat to medium, and mix in the parsley and cooked orzo. Place spinach in the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach is wilted. Serve topped with Parmesan cheese.

    Saved this recipe awhile ago but just cooked it tonight I shouldn’t have waited so long! Added some onions and bell pepper. Used Tony Chacherie instead of red pepper flakes. Very tasty and versatile as evidenced by other members’ comments. - 11/17/20

    Turned out good, but was a bit bland. I didn't know how much paprika to add, so I winged it. Also, I added red and yellow peppers and the little tomatoes (cut in half). - 1/24/12
