Chicken sauteed in garlic and red pepper and tossed with cooked orzo and fresh spinach. Very tasty! Chicken sauteed in garlic and red pepper and tossed with cooked orzo and fresh spinach. Very tasty!
Number of Servings: 4

    1-1/3 cup uncooked orzo pasta
1 can low sodium chicken broth
    1 cup water
    2 tablespoons olive oil
    1 tbsp minced garlic
1/4 teaspoon crushed red pepper flakes
3 skinless, boneless chicken breast halves - cut into bite-size pieces
    salt to taste
    1 tablespoon chopped fresh parsley
    2 cups fresh spinach leaves
    grated Parmesan cheese for topping

1. Add chicken broth and one cup of water to a pot, bring to a boil. Add orzo pasta, cook for 8 to 10 minutes, until al dente, or until orzo absorbs most of the liquid.

2. Heat the oil in a skillet over medium-high heat, and cook the garlic and red pepper 1 minute, until garlic is golden brown. Stir in chicken, season with salt, pepper, and paprika, and cook 5 minutes, until lightly browned and juices run clear. Reduce heat to medium, and mix in the parsley and cooked orzo. Place spinach in the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach is wilted. Serve topped with Parmesan cheese.

  • Very Good
Turned out good, but was a bit bland. I didn't know how much paprika to add, so I winged it. Also, I added red and yellow peppers and the little tomatoes (cut in half). - 1/24/12

  • Very Good
This was really good. Next time I think I would use more spinach though. I had a bag of fresh spinach to use and used about half the bag. I could have definitely put the whole thing in it though. Thanks for sharing - 4/15/10
