    1-1/3 cup uncooked orzo pasta
    1 can low sodium chicken broth
    1 cup water
    2 tablespoons olive oil
    1 tbsp minced garlic
    1/4 teaspoon crushed red pepper flakes
    3 skinless, boneless chicken breast halves - cut into bite-size pieces
    salt to taste
    1 tablespoon chopped fresh parsley
    2 cups fresh spinach leaves
    grated Parmesan cheese for topping


1. Add chicken broth and one cup of water to a pot, bring to a boil. Add orzo pasta, cook for 8 to 10 minutes, until al dente, or until orzo absorbs most of the liquid.

2. Heat the oil in a skillet over medium-high heat, and cook the garlic and red pepper 1 minute, until garlic is golden brown. Stir in chicken, season with salt, pepper, and paprika, and cook 5 minutes, until lightly browned and juices run clear. Reduce heat to medium, and mix in the parsley and cooked orzo. Place spinach in the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach is wilted. Serve topped with Parmesan cheese.

  • This was really good. Next time I think I would use more spinach though. I had a bag of fresh spinach to use and used about half the bag. I could have definitely put the whole thing in it though. Thanks for sharing - 4/15/10

  • This is like a recipe I found on that I absolutely love. I use whole wheat orzo to make it a bit more healthy. I also use 3oz of chicken per person. Just today I tried adding reduced fat feta instead of parm to top, and it was just delicious! - 1/9/10
