Introduction

My roommate taught me this and everyone I taught has loved it. It's easy, fresh, tasty, low calories and vegeterain. My roommate taught me this and everyone I taught has loved it. It's easy, fresh, tasty, low calories and vegeterain.
Number of Servings: 6

Ingredients

    1 Lb Whole wheat Rotini Pasta
    1/2 Lb Pineapple chunks
    1 Cucumber, very finely grated
    1/2 Green bell paper, very finely grated
    1 tea spoon Olive oil cooking spray
    Salt to your taste (approx 1 tea spoon)
    1/4 bunch Cilantro, finely chopped

Directions

In a deep pan heat approx 3 Lb water.
Add salt, Olive oil cooking spray, and pasta.
Boil for 8-12 min on low, or until pasta becomes tender.
Remove hot water and gently rinse pasta with luke-warm water. Let it cool for 5 min.
In a large salad bowl add pasta, Pineapple chunks, grated Cucumber and Grated green bell papers.
Gently mix and spread Cilantro over it. Keep in refrigerator for 15 min and its ready to serve.

(Hint: If you want less of sweet taste you may reduce the quantity of Pineapple and increase cucumber and vise-versa)

PS: The actual calories, fat, cholesterol etc. values listed here are higher, as I could not find Whole wheat pasta in the list. These are values for regular pasta. I haven't included olive oil cooking spray as the cooking spray has zero calories and zero fat.
