Ingredients

    Cake:
    2-1/4 c. flour
    1-1/4 c. sugar substitute for baking
    2 T. brown sugar, packed
    1/2 c. egg substitute
    1/4 c. applesauce, unsweetened
    1 c. lowfat buttermilk
    2 tsp. ground cinnamon
    1/2 tsp. ground cloves
    2 tsp. baking powder
    1 tsp. baking soda
    1/4 c. grated carrots
    1 jar pureed carrot baby food

    Icing:
    3/4 c. lowfat cream cheese
    1/4 c. fat-free sour cream
    1/3 c. sugar substitute for baking
    1/4 c. light margarine

Directions

Add all cake ingredients to a mixing bowl. Stir until completely blended. Pour into a 9 x 12 baking dish sprayed with non-stick cooking spray. Bake at 375 degrees for 30-40 minutes or until a toothpick inserted in the center comes out clean. Allow to cool.

Add all icing ingredients to a clean mixing bowl and beat on high speed with electric mixer until smooth and fluffy. Spread onto cooled cake. Cut into 12 pieces (2" x 3" in.).
