Introduction

Number of Servings: 4

Ingredients

    1 c brown lentils
    1/2 c brown rice
    1 onion, chopped finely
    1 tbsp canola oil
    2 cloves garlic, minced finely
    1/2 tsp salt
    pepper to taste

Directions

1) Bring 5 c water to a boil in a 3 qt. saucepan. Stir in lentils, then reduce heat and simmer for 20 min.
2) Heat oil in a skillet over med/high heat, then saute onions and garlic until onions are clear. Set aside.
3) After lentils have simmered for 20 min., add rice and sauted onion and garlic to the sacuepan. Bring to a boil, then reduce heat and simmer for another 30-45 minutes. (depending on how mushy you like your lentils).
4) Serves 6.

    Very Good
    This soup is great and super easy to make. I threw in some frozen peas which added some flavor. Probably any frozen (or canned, or fresh) veggies added would boost the flavor too. - 10/3/07
