Introduction

Number of Servings: 1

Ingredients

    2 eggs
    Dash of milk
    Salt and pepper
    Small potato- diced and boiled
    Smattering of mushroom slices (like 10 slices, about 3 small mushrooms)
    Tbsp of parmesan cheese
    (Sometimes I add Chillies, green or red peppers, tomato, chili sauce, spring onions etc)


Directions

Whisk egg and milk together in a bowl. Season with salt, pepper, and fresh parsley if available. Throw into a hot pan.

When omelet starts to set, throw the boiled, diced potato, mushrooms, etc onto half of it. Sprinkle cheese over the top. Flip the empty half over the full half. Fry a little while longer.

Tip out and eat. Ugly, but tasty. I first learnt a version of this omelet as a Spanish Omelet- though I have no idea whether it is or not. I still call it thus.
