Introduction
I developed this recipe to deal with a craving for nachos. Usually when I eat nachos I pig out and I worried that this wouldn't fill me up. The scoop of refried beans solved that problem and added some variety. I developed this recipe to deal with a craving for nachos. Ingredients

* Allegro 4% Fat Cheese, 1/4 block, shredded
* Garden of Eatin' Baked Yellow Tortilla Chips with Flax, 50 gram(s)
* Chicken Breast, no skin, 3 ounces, diced
* Red Ripe Tomatoes, 1/4 diced
* Fat-free refried beans 0.25 cup
* Pepper, red or cayenne, 1 tsp
* *Cumin seed, 1 tbsp
* Cilantro, 1 tbsp minced
* Green Peppers, 3 tbsp chopped
Directions
Makes 1 serving
Preheat oven to 400°
Coat a non-stick frying pan with vegetable spray. Sautée the chicken, cayenne and cumin over medium high heat until cooked through.
Heat the refried beans and scoop into the middle of a small round baking dish. Arrange the tortilla chips around the beans in a ring one layer deep.
Distribute cheese over chips and beans evenly, then layer chicken and vegetables on the chips. Sprinkle beans and nachos with cilantro.
Bake at 400° for 10-12 minutes or until cheese is well melted. Do not allow chips to burn.
Serve with fat-free sour cream and salsa.
