Number of Servings: 8

Ingredients

    2.5 cups artichoke hearts, chopped fine
    .75 cup roasted red peppers, chopped fine
    4 teaspoons garlic, minced
    4 tablespoons olive oil
    4 tablespoons parmesan cheese, grated
    1.5 teaspoons kosher ore or less, according to taste)
    1.5 teaspoon ground black pepper
    1 teaspoon paprika
    1 tablespoon dried basil flakes
    dash cayenne pepper
    2 pounds tilapia fillets

Directions

Mix all ingredients except fish in a mixing bowl. Adjust seasonings to taste. Line a rimmed baking sheet with aluminum foil and spray the foil with cooking spray. Place the fillets on the foil. Cover each fillet with 1/8th of the artichoke mixture. Bake for 15 or so minutes at 375 degrees until fish is opaque and flakes easily with a fork.
