This is so delicious and tastes just like an enchilada. If you would like a little more creamy texture add light sour cream and cheese(calories not included). Ingredients

    1 Medium Onion Diced
    2 Stalks Celery Diced
    3 Medium Poblano Peppers
    1 Clove Garlic
    1 Tsp Ground Cumin
    1/2 Tsp Ground Coriander
    1/4 Tsp Cayenne Pepper or more to taste
    1 1/2 lb Chicken Breast w/o skin
    2 Can White Beans
    4 Cups Chicken Stock
    3/4 Tsp Dried Oregano
    1 Can Hominy
    Salt

Directions

Put all ingredients in slow cooker and set on low for 8 hours or high for 4 hours. Shred chicken before serving. Top with fat-free sour cream or light cheese(calories not included).

Serving Size is 1 1/2 cup

    Its more of a spanish bean stew then anything. Be sure to use a big crock pot for this recipie! - 12/30/09
