Ingredients

    2 boneless skinless chicken breasts, sliced
    1 c rice
    2 c water
    1 medium yellow onion
    2 cloves garlic, chopped
    1 can black beans
    1 can diced tomatoes
    1 can green chiles
    3/4 tsp cumin
    3/4 tsp chili powder
    Black pepper to taste
    Salsa as needed

Directions

In a medium pot, boil 2 c water. Add rice, cover and reduce heat to low. Simmer for 15 minutes.
Meanwhile, in a large pan, cook garlic and onions in small amount of water over med-high heat.
Add cumin and chili powder (and black pepper if you wish). Stir. Add salsa as needed to keep from sticking to pan. Add chicken and cook until white, stirring occasionally. Add beans, tomatoes, and chiles, stir and cook until hot through. Serve over rice. Add hot sauce for more spice.
