Ingredients

    1 recipe Teriyaki Sauce, reduced
    4 (6 oz.) red snapper fillets
    1 tsp light sesame oil or safflower oil
    1 onion, sliced
    soy sauce
    2 carrots, cut into matchsticks
    1 yellow summer squash, cut into matchsticks
    1 or 2 stalks broccoli, cut into small flowerets
    freshly grated daikon

Directions

After preparing sauce, marinate fish for 15 minutes, turning several times. Meanwhile, heat oil over medium heat. Add onion and a dash of soy sauce and stir-fry 2 minutes. Add carrots and a dash of soy sauce and stir-fry 2 minutes. Add squash and a dash of soy sauce and stir-fry 1 minute. Add broccoli and a little water, cover the wok and steam until the broccoli is bright green, about 3 minutes.

Transfer fish and marinade to a deep skillet, add a little water, and simmer over medium-low heat, covered, until fish is opaque in the center, about 10 minutes.

Arrange fish on a serving platter. Spoon stir-fried vegetables over top and serve immediately, with a garnish of grated daikon on the side.
