Introduction

Ingredients

    1 egg +1 egg white (optional)
    1 Splash Milk (optional)
    1/4 Avocado
    2-4 Thin Strips Pepper Jack Cheese
    1 Cup Southwestern Vegetable Mix (The Ultimate Southwest Blend by C&W)
    Pam or Margerine
    Salsa (optional)

Directions

Makes One Serving

1. Chop/Prep all vegetables or defrost portion of frozen vegetables in microwave. Slice cheese.

2. Heat small skillet to medium high and add a knob of butter or cooking spray.

3. Break egg into cup and add a splash of milk and a pinch of salt and pepper. Scramble with fork and pour onto skillet, rolling skillet to coat the bottom with egg.

4. Once egg just solidifies against the skillet and is still raw on top add cheese to the middle, top with veggie mix and finally slices of avocado.

5. When top of egg is just firm to the touch and almost done, gently fold the sides of the egg up over the filling and let it sit for 30-40 seconds to fully finish cooking.

6. Top with salsa if desired.
