    4 chicken breasts
    2 sweet potatoes, cubed
    1 med onion, chopped
    2/3 cup orange juice
    1 can coconut milk
    1 tsp chicken bouillon
    2 tsp curry powder
    1 tsp red curry paste
    1/4 tsp pepper
    1/2 cup brown sugar
    1/4 cup shredded coconut


Place chicken, onions and sweet potatoes in crock pot. In separate bowl, mix all other ingredients. Pour over stuff in crock pot. Cook 6 hours on low, or 3 hours on high. Serve over rice. Nutrition info does not include rice.

  • I LOVE this recipe! Even had my daughter make this for my B-Day dinner. I had never had curry before. If this is similar to what real curry tastes like I might be more adventurous. - 6/3/09

  • I used one half the sugar, no shredded coconut, lite coconut milk and also added garlic. Next time I would add some veggies at the end. Maybe some peas. - 4/15/09
