I used one half the sugar, no shredded coconut, lite coconut milk and also added garlic. Next time I would add some veggies at the end. Maybe some peas.
YUM!!! A picky 3 year old wolfed it down and so did! I didn't even use the brown sugar (it was sweet enough already).
