Introduction

I love stuffed mushrooms and really wanted to have a nice, low-cal version to nosh on. I hope you guys love these creamy little mushrooms! I love stuffed mushrooms and really wanted to have a nice, low-cal version to nosh on. I hope you guys love these creamy little mushrooms!
Number of Servings: 3

Ingredients

    9 Large Mushrooms
    4oz Plain Silver Goat Cheese
    2oz Fat Free Cream Cheese
    1 Tbsp Fat Free Coffee Mate
    1/4 finely chopped red bell pepper
    1/2 Tbsp Garlic Powder
    1 tsp Thyme, fresh or dried
    2oz canned Salmon
    salt and pepper, to taste

Directions

Pre-heat the oven to 375 degrees.

Remove the stems off of all the mushrooms and clean with a damp paper towel. Set aside.

Cream together the goat cheese, cream cheese and creamer. Mix in the red peppers, spices and salmon. Fill the mushrooms with the cheese mixture.

In a greased 8x8 pyrex dish, place the mushrooms and bake for 10-12 minutes.

    look for Silver Goat Chevre at Kroger or Giant :) Goat cheese is tangy and smooth. I love to mix it with a bit of fat free cream cheese to stuff salmon and pork loin as well :-D
