Introduction

Ingredients

    2 T olive oil
    1 medium red onion, chopped
    8 garlic cloves, chopped
    2 small carrots, chopped
    1 medium zucchini, chopped
    8 oz portobello mushrooms (OR 1 orange bell pepper), chopped
    12 oz fresh spinach, chopped
    2 tsp parsley
    1 tsp basil
    1 tsp thyme
    1 tsp oregano
    1 tsp salt
    1/4 tsp pepper
    1 package (349 g) firm silken tofu
    1 jar (3 c) pasta sauce
    9 lasagna noodles

Directions

Heat the oil in a large skillet. Add the onion and saute just until it softens.

Add the garlic, carrots, zucchini, and mushrooms (or pepper) and saute for 2 minutes.

Add the spinach, herbs, salt, and pepper and stir until the spinach is wilted.

Crumble the tofu into the skillet. Add the pasta sauce and bring the mixture to a boil.

In a 2 L baking dish, spread a layer of sauce, then a layer of dry noodles, until ending with a layer of sauce.

Cover with aluminum foil and bake at 375 for 50-60 minutes.

    I thought this would be a lot more work to make then it was. It was really good too! My carnivore husband had seconds. So did my picky 2 year old! :-) - 4/30/10
