Ingredients

1.75 cups flour
.75 cups sugar
2 tsp baking powder
.75 tsp baking soda
2 tsp pie spice
.75 cups greek yogurt
1 egg
4tbs melted butter
2.5 cups grated carrots
Directions
Preheat the oven to 375
Line a 12 cup muffin time with cupcake papers.
Mix together the dry ingredients in a large bowl
Add the yogurt, egg and carrots and stir to combine.
Stir in the grated carrots.
Divide the batter evenly between the muffin cups.
Bake in a 375 degree oven for 20 minutes or a cake tester inserted in the middle of the muffin comes out clean.
