Introduction

This is a recipe I just tried out of an old Weight Watchers Cookbook. It was really tasty and easy! Plus, it could easily be altered to suit your tastes. Number of Servings: 4

Ingredients

    (4) 4oz Pork Cutlets
    2 Baking Potatoes - Cleaned and sliced thin
    2 Large Onions - Sliced
    2 Cups Sliced Mushrooms
    1/4 Cup chopped Basil
    1 Can French Cut Greenbeans (Drained & Rinsed)
    1 can Stewed Tomatoes
    Salt and Pepper to Taste.

Directions

Preheat oven to 325, and grease a 13x9 casserole dish.

Place the Potatoes, Onions, Mushrooms, Basil, Salt and Pepper into the dish. Toss to coat. Place the Pork Cutlets on top of Vegetables. Top with Green Beans and Tomatoes.

Cover and bake for 1 and 1/2 hours. (I did it for just over an hour at 350, to speed it up).
