Introduction

No noodles! Use homemade broth and don't skim the fat to give it more flavor

SP has calculated high sodium but I think it was from "packaged" chicken broth. I make my own by saving chicken carcasses after we're finished with rotisserie chickens so I think the real sodium content is MUCH lower.

Ingredients

    1 c Bok Choy
    1 C Celery
    1/2 C green onion
    1 whole chicken breast (both sides of the chicken, with skin, cooked)
    6 cups chicken broth
    spices to taste (I used salt, garlic pepper, poultry seasoning)

Directions

Cook chicken

Chop bok choy, celery, onion & sautee in pan with a little bacon grease or fat from homemade chicken broth

Add Chopped chicken and broth

simmer until veggies are cooked to liking
