Introduction

A deliciously moist cupcake. Great on their own, but better with rum cream cheese frosting! A deliciously moist cupcake. Great on their own, but better with rum cream cheese frosting!

Ingredients

    1 c. all-purpose flour
    1/2 t. baking powder
    1/4 t. baking soda
    pinch salt
    3/4 c. granulated sugar
    1/4 c. canola oil
    1 egg
    1/3 c. buttermilk
    1/2 c. crushed pineapple, undrained OR fresh pineapple crushed with a fork
    1/2 t. coconut extract

Directions

Preheat oven to 350. In a small bowl, mix together flour, baking powder, baking soda and salt. In a large bowl whisk together sugar, oil, coconut extract and egg until smooth. Beginning and ending with dry ingredients, alternately whisk in flour mixture and buttermilk, beating until smooth. Stir in pineapple. Fill muffin tins 2/3 full. Bake 20-25 minutes, or until the tops spring back lightly when touched. Allow cupcakes to cool in the pan for 10 minutes, then remove to wire rack to cool completely. Frost & enjoy!

    Just baked these. I only but 1/4 cup of sugar, replaced the half cup with splenda and added some ground flax seed in place of the oil. They turned out excellent. I will bake these all the time. - 5/12/09

    Made this recipe for a Labor Day cookout. Very light and moist cupcakes, and they were a big hit! I paired them with a vanilla-peach vodka frosting - highly recommend this combination. - 9/7/15

    I just made these and WOW.. they are fantastic! They are definitely some of the best cupcakes I've had. My husband loves them so much I'm afraid he's going to OD on them! haha! I topped them with some cream cheese frosting and they're decadent! Thank you! - 8/1/09
