Introduction

This is a favourite of mine - very tasty and filling and can be adapted to any vegetables you fancy or have left over in the fridge! I like mine VERY hot, but if you don't I would advise you use only one chilli or alternatively use chilli flakes to taste. Ingredients

    1 tbsp sesame oil
    2 cloves garlic (finely chopped)
    3 bird eye chillis (finely sliced - seeds in)
    3 scallions (spring onions) sliced into 1cm pieces
    4 medium mushrooms or 1 large flat mushroom - chopped into largish pieces
    4 slices ham - sliced into 3/4" pieces
    1/4 cup frozen peas (warm in microwave)
    1/4 cup frozen sweetcorn
    1tbsp dark soy sauce
    Large handfull Greens such as Pak Choi
    Juice of 1 lemon or 2 limes

Directions

1. Put brown rice on to simmer according to pack instructions.
2. Heat sesame oil in a pan, add chopped garlic and bird chillis. Fry on a medium high heat for 1minute.
3. Add scallions and mushrooms and fry for 2 minutes. Meanwhile heat frozen peas and sweetcorn in microwave for 2mins.
4. Add sliced ham and fry for 1 minute.
5. Add peas, sweetcorn, soy sauce and juice of half a lemon or 1 lime and fry for 1 minute.
6. Add greens and stir through before adding rice. Continue to stir fry until mixed together and heated through completely.
7. Divide into two portions and serve in bowls. Add extra soy sauce and squeeze the remaining lemon over dish to taste.
