Ingredients

2 Heads of garlic
4 skinless, boneless chicken breasts
2 tbsp. flour
2 tsp. olive oil
1/2 cup chicken broth
1/4 tsp. dried rosemary, crumbled
1/4 tsp. each salt and pepper
1/2 tsp. grated lemon zest
1 tbsp. lemon juice
2 tbsp. chopped parsley
Directions
1) Preheat oven to 450. Wrap each head of garlic in foil. Bake for 45 min. or until very soft when squeezed. When cool enough to handle, cut off the stem end from each head of garlic, squeeze the garlic pulp into a small bowl and mash with a fork.
2) Dredge the chickn in the flour, shaking off the excess. In a large non-stick skillet heat the oil over moderate heat. Add the chicken and cook for 8 minutes or until lightly browned on both sides.
3) Add the mashed garlic, the broth, 1/2 cup of water, rosemary, salt, pepper and lemon zest and bring to a boil. Reduce to a simmer, cover and cook stirring occasionally for 4 minutes or until the sauce coats the chicken and the chicken is cooked through. Stir the lemon juice and parsley into the sauce. Serve the chicken topped with the sauce
