Introduction

My variation using brown and wild rice and low sodium fat free chicken broth. My variation using brown and wild rice and low sodium fat free chicken broth.
Number of Servings: 10

Ingredients

    2.25 cup water
    1 cup reduced sodium chicken broth
    1.5 cup PC Organics Brown and Wild Rice Blend
    2 tsp olive oil
    2 tbsp finely chopped onion
    2 tbsp finely chopped green pepper
    1/2 cup chopped pecans
    1/4 tsp ground sage
    1 cup finely chopped celery
    5 oz. sliced water chestnuts
    1/4 tsp nutmeg

Directions

1. Bring water and stock to a boil in medium size saucepan.

2. Add rice and stir. Cover and cook for 30-40 minutes.

3. Remove pan from heat. Reserve.

4. Heat oil in large nonstick skillet.

Saute onion and celery over moderate heat 3 minutes. Stir in remaining ingredients including reserved cooked rice. Fluff with fork before serving.

Serving size 1/2 cup Serves 10
