Sweet, spicy and savory, this soup really hits the spot on a cold night. Sweet, spicy and savory, this soup really hits the spot on a cold night.

Ingredients

    1 onion, diced
    2 tbsp butter
    1 clove garlic, minced
    2 tsp freshly grated giner
    1 butternut squash, peeled, seeded, and chopped into one inch cubes
    2 large apples, peeled, seeded, and chopped into one inch cubes
    4 cups beef broth

Directions

1. Saute onion, garlic, and ginger in butter until onion is translucent
2. Add squash, apples, and broth.
3. Cook on medium heat for ~ 1/2 hour until squash and apples are soft.
4. Puree.
5. Add salt and pepper to taste.
