Ingredients

    1/4 cup cocoa powder
    1/4 cup sugar
    Yogurt cheese(recipe follows)
    1/4 cup finely chopped maraschino cherries
    1/4 cup sliced almonds
    1/2 tsp pure vanilla extract
    1/4 tsp pure almond extract
    1 envelope whipped topping mix
    1/2 cup cold skim milk
    12 paper-lined muffin cups

    2 cups Danon Lowfat Vanilla Yogurt


Directions

In a medium bowl, stir together cocoa, sugar,and Yogurt cheese(make a day ahead of time) until well blended. Stir in cherries, almonds and both extracts. In small deep bowl, combine topping mix and milk; prepare according to package diretions. Gradually fold whipped topping into cocoa mixture. Spoon into muffin cups. Cover; freeze until firm(at least 6 hours). Befor serving allow to stand at room temp about 5 minutes.
MAKES 12 SERVINGS

YOGURT CHEESE DIRECTIONS:
Line a non-metallic colander or sieve with large piece of double thickness cheesecloth(cloth diaper will work too); place colander over deep bowl. Spoon 2 cups(or 2 8 oz containers) vanilla low fat yogurt(be sure no gelatin is added) into prepared colander; cover. Refrigerate until liquid no langer drains from yogurt, about 24 hours. Remove yogurt from cheesecloth; discard liquid.
