Ingredients

3 1/2 - 4 cups - whole wheat flour (Hodgson Mill)
4 tsp - Vital Wheat gluten
1/4 cup - 1% Milk
1/4 cup - Extra Virgin Olive Oil
1/4 cup - Honey
1 package - Yeast (quick rise)
1 1/3 cup - Water
1 1/4 tsp - Salt
Sprinkle - Cinnamon
Directions
Heat all wet ingredients on stove where it’s warm to a finger. (very important that it is not hot)
I use my bread machine: Put in wet ingredients, add 3 1/2 cups flour, create a hole in the flour and add yeast to the newly formed hole, then sprinkle the vital wheat gluten on top, then sprinkle a good sprinkle of cinnamon. Start the bread machine for a whole wheat loaf. (when kneading if the dough is sticky or wet and rest of flour [you will probably need to do this]) and Let the bread machine run through a full kneading cycle (approx. 45 min)then remove the mixing paddle. This allows the loaf to rise as much as possible with out the machine punching it back down. Easy...
Alternate: Put dry ingredients in large bowl then add wet. Knead 10 min. (when kneading if the dough is sticky or wet and rest of flour [you will probably need to do this]) Put in selected bread pan. Allow to rise in a warm location (maximum 1:45 hr. min.). Cook 40 minutes at 350 (second 20 minutes with foil on top). When down a thump to the bottom of the pan will result in a hollow sound.
Another Alternate: Add a cup or so of your favorite dry fruits: raisin, cranberries, cherries, etc. for a more delicious result.
Comments: In the bread machine it isn’t vital to let it run a whole knead cycle but I guess it helps. But it is very important when your machine switches from knead to rise that you take the paddle out (older machines). In newer machines you maybe able to program out the Punch down cycle. All of this allows your bread to rise to maximum capacity
Also, this bread may have a little more calories and fat than you like but it is a very natural and a healthy alternative to store bought breads.
