    2 cups Rice
    1 can red or black beans
    2 chicken breast or 1 turkey breast
    1 can pineapple rings in heavy syrup, keep the juice
    1/8 cup onion
    2 jalapenos
    1 stalk celery
    1 clove garlic
    2 medium tomatos
    olive oil
    juice of one lemon or lime
    1 tsp harissa
    1 tbsp chicken bullion powder
    Broccoli or collared greens
    3 medium carrots


chop 7 rings of pineapple, tomato, onion, 2 jalapenos, celery; crush garlic... toss with s & p, lime and 3tbsp oil. fridge for most of day

dice 2 jalapenos. rinse rice then toss with chicken seasoning and jalapenos, then steam (if boiling rice, add the seasoning to the water)

heat beans and add to rice when finished.

mix pineapple juice and harissa, boil until reduced and thick...

fillet each chicken breast, so you have 2 thin, but wide pieces per breast. Same with the turkey breast, but then cut in half to make 4 small pieces. grill meat and remaining pineapple rings

cut carrots into coins and section broccoli into bite size peices. Boil until tender.

plate rice and beans... place chicken in center of rice... glaze with sauce... top with pineapple salsa... veggies on side
