Introduction
This lowfat version will surprise those that did not know just how healthy it is! This lowfat version will surprise those that did not know just how healthy it is!Number of Servings: 10
Ingredients

2 packets taco seasoning
2 lbs. Chicken breast cooked (I put in crockpot and let cook all day and then just take out when making the casserole.)
12 corn tortillas
2 whole green chiles diced
6 oz. mexican blend cheese
1 can enchilada sauce
Directions
Preheat oven to 450 degrees. Take chicken out of crockpot and put in bowl. Stir in 1 cup water and two packets of taco seasoning. Mix in diced green chiles. Slice tortillas vertical into slices the size of lasagna noodles. Using the 13 X 9 dish and spray with non-stick spray. Complet layer 3 times:
1/3 Tortillas
1/3 chicken mixture
1/3 of cheese
1/3 can of enchilada sauce
Repeat two more times ending with cheese layer. Cook with lid on for about 25 minutes and then remove lid and cook 15 additional minutes.
Top with lettuce and fat free sour cream. My family loves this!
