Ingredients

4 cups water
1 cup pinto beans
1 cup diced onion
1 cup diced bell pepper
1.25 lbs ground turkey
1 packet mild chili seasoning
1 can diced tomatoes
2 cups shredded lowfat colby-jack cheese
1/4 cup diced jalapenos (optional)
Directions
1) The night before, rinse one cup of pinto beans. Put washed beans into a crockpot and add 3 cups of water. Let beans soak overnight.
2) Turn crockpot onto low and add one additional cup of water. Add onion and bell pepper. Let cook on low for 3 hours. Then turn crockpot to high and let cook 4 hours.
3) In a skillet, brown ground turkey. Drain any excess fat from meat, add the chili seasoning and diced tomatoes. Stir together thoroughly. Let simmer for 15 minutes.
4) Add meat mixture to crockpot and stir well. Turn crockpot to low heat. Let simmer for 3 hours. If you want to add the jalapeno pepper, do it when you add the meat.
5) 30 minutes prior to serving, stir cheese ino chili and let cook for 30 minutes. Serve and enjoy
