Number of Servings: 10


    2 cups dried lentils (rinsed)
    1 cup brown rice
    1 pkg frozen spinach
    2 cans diced tomato (use seasoned for extra flavor)
    4 cups vegetable broth
    1 onion finely chopped
    1 cup finely chopped carrots
    1 cup finely chopped celery (can sub celery salt)
    3 cloves minced garlic
    2 Tbsp. Lemon juice
    2 Tbsp. Curry Powder
    1 Tbsp. Ground Cumin
    1 tsp. Ginger (paste)
    Salt & Black Pepper to taste


Combine all ingredients in crock pot and stir. (No need to thaw spinach - just make sure to stir mid-way).

Set crock pot to cook on Low for 8 hours.

Makes approx. 10 serving (1 serving = approx. 1 cup).

    Love this! I used some homemade stock I had on hand and sauteed the onions before I put them in. I also had a half of a potato I threw in. I had to add more liquid, but it was awesome. Looking forward to leftovers tomorrow! (my 17 mo liked it too!) - 10/5/10

    1 cup of cooked brown rice or "raw" brown rice? does the rice cook in the dish? I want to make this tomorrow - sounds delicious! - 4/18/09

    Thanks for the recipe which I will try.
    I love the comments about the "chicken" broth...when I read the recipe, it says "vegetable" broth.
