Introduction

As written this recipe has a lot of sodium but I used low sodium broth, tomatos, and tomato sauce so that would lower the sodium quite a bit. Ingredients

    1 LB Jennie-O Sweet Italian Turkey Sausage, casings removed
    1 Cup chopped Onion
    2 Cloves Garlic, minced
    1 1/2 Cups sliced Zucchini
    1 Cup shredded Carrots
    4-5 Leaves fresh basil finely chopped
    2 Cans diced tomatos with basil, garlic, and oregano (medium size-low sodium)
    1 small can of tomato sauce (low sodium)
    6 cups low sodium beef broth
    1 Tsp dried Oregano
    1 Pkg Whole Wheat Three Cheese Tortellini
    3 Tbsp Chopped Fresh Italian Parsley



Directions

In a 5 quart Dutch oven, sprayed with pam,
brown sausage. Remove sausage and drain, reserving 1 tablespoon of the drippings.

Saute onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.

Stir in zucchini and parsley. Simmer covered for 30 minutes. Add tortellini during the last 10 minutes.

Makes about 8 servings. Very filling soup! Great for cold winter nights...enjoy!!!

    This is very tasty! I added some kidney beans for extra protein. This makes a LOT of soup! - 3/1/09
