Introduction

I made this soup for my daughter when a cold had her down. She loved the taste and all of the aromatic ingrdients really cleared her head! I made this soup for my daughter when a cold had her down. She loved the taste and all of the aromatic ingrdients really cleared her head!
Number of Servings: 6

Ingredients

    1 T EVOO
    1 boneless skinless chicken breast, diced
    1 med onion, diced
    2 t minced garlic
    1 c chopped fresh parsley
    2 cups chopped kale
    2 cups frozen peas and carrots
    4 cups Swansons chicken stock, reduced sodium
    4 cups water
    3 cups uncooked enriched egg noodles
    1 t Tabasco sauce

Directions

Heat EVOO in soup pot. Add next 6 ingredients. Saute till onions are translucent. Add stock and water. Bring to a boil, then add noodles and Tabasco. Return to a boil, then cook according to directions for the noodles.


Makes 6 1.5 c servings
