Introduction

Easy to make, and a nice change from traditional soups. I like making the meatballs smaller, but they can be made according to preferences. High protein meal! Ingredients

    Meatballs:

    1 Lb. Ground Turkey, 93% lean
    1/4 Cup Italian Bread Crumbs
    1/2 Cup Onion, finely chopped
    1 Egg

    Soup:

    1 - 6 ounce Uncle Ben's Long Grain & Wild Rice Original Recipe
    12 ounce Can of Evaporated Skimmed Milk
    4 Tbsp. Whole Grain Flour
    8 Cups Low sodium chicken broth
    Fresh Ground Pepper

Directions

1. Combine all the ingredients for the meatballs into bowl, be sure to combine well.
2. In a large pot combine rice and broth, bring to a boil.
3. Combine Evaporated Skimmed Milk with Flour in a seperate bowl
4. Drop meatballs into boiling broth, cover for 10-15 minutes until cooked though.
5. Add milk & flour combination stirring while adding.
6. Cook until thick and bubbling.
7. Serve with fresh cracked pepper on top.
