Introduction

I like this with a little side salad and light lime dressing. I like to make the sauce in a crock pot in the morning and let it sit on low to develop a good flavour. Ingredients

    1 8oz pkg of Hodgson Mill Whole Wheat Lasagna noodles
    1 24oz jar Classico Fire Roasted Tomato and Garlic sauce
    1 6oz can of tomato paste
    1 cup water
    1 lb of 93% lean ground turkey
    1 cup onion, chopped
    1 Tbsp garlic powder
    1 cup fresh spinach
    1 cup part skimmed Mozzarella
    3 cups low fat cottage cheese
    2 eggs
    8 tsp Parmesan cheese

Directions

In a pan over medium heat cook turkey and onion. Add to a slow cooker and mix in pasta sauce, tomato paste, water and garlic powder. Cook on low for 4 hours. In a large pot bring water to boil. Add the lasagna noodles and cook for 7 minutes. While the noodles are cooking, mix together the cottage cheese and eggs. Drain the noodles. Spray a 9X13 inch pan with cooking spray. Layer three noodles across the bottom of the pan touching one end and a half a noodle at the other end to fill in the space. Spoon a layer of sauce over the noodles and and the a layer of cottage cheese mixture. Repeat these layers ending with a layer of noodles. Top with mozzarella cheese and sprinkle parmesan chesse over it. Bake in the oven for 30 to 40 minutes at 350 degrees. Makes 10 servings.
