Ingredients

    1 tbsp olive oil
    1 cup chopped onion
    2 tsp minced garlic
    2 tbsp flour
    2 tbsp paprika
    1 28 oz can petite diced tomatoes
    3/4 cup chopped carrots
    3 medium potatoes, peeled and chopped
    1 medium red bell pepper, chopped
    6 cups vegetable broth, low sodium
    3 cups water
    1 1/2 cups elbow macaroni, uncooked
    2 15 oz cans great northern beans, drained and rinsed

    Optional Garnish: 1/4 cup lowfat sour cream

Directions

In a large pot, heat the oil and add onions and garlic and cook them until golden. Stir in flour and paprika and cook for 2 minutes. Whisk in water. Add the carrots, potatoes, pepper, tomatoes and broth. Bring to a boil and add macaroni and beans. Simmer for 45 minutes or until macaroni is cooked. Add salt and pepper to taste. Garnish with some of the sour cream if desired (not included in nutritional information).
