Ingredients

one box Near East Mediterranean Curry couscous
one medium chopped onion
one chopped bell pepper
one chopped carrot
one medium chopped tomato
one can fat free chicken broth
8 to 12 oz. boneless skinless chicken breast
2t olive oil
1/2c white wine (cooking wine)
1t curry powder
1t ground cumin
Directions
Add chopped onion, carrot, garlic, 1/2c white wine and 2t olive oil to a skillet and stir over med/high heat until onions are soft, 5-10 minutes.
Add chopped bell pepper, tomato, curry, cumin & Near East seasoning packet, stir 1-2 minutes more. Add chopped chicken breast & stir until chicken is cooked through, about 2 minutes.
Lower heat and add chicken broth, then couscous. Remove from heat & let sit for 5 minutes, covered, until couscous has absorbed all the broth.
Voila! Makes 5-6 1.5 cup servings.
As an alternative, add 1/4 cup plain, fat free yogurt just before serving. YUM!
The hardest part of this recipe is finding the Mediterranean Curry flavor of Near East couscous at the grocery store. According to the box, though, the spice packet consists of honey, salt, garlic, turmeric, onion, and "spices." It might be fun to experiment with your own seasonings.
