Introduction

Ingredients

2 chicken breasts
1 can diced tomato
1 tsp garlic powder (or fresh garlic)
1 tsp onion powder (or fresh onion)
4 cups fresh spinach
(or 1 pkg frozen/thawed/drained)
1/2 cup - 1% cottage cheese
1/2 cup mozzarella cheese (divided)
1 tbsp poultry seasoning
(or Cajun seasoning for the spicy people)
Directions
preheat oven 400 deg
in skillet, put a little water, garlic powder, onion powder, spinach, cover and let wilt, stirring occasionally. put aside to cool.
(note: if using fresh garlic/onion you will need approx 2 tbsp oil/butter to sautee in prior to adding spinach. these calories are not included in this recipe.)
Make very thin slices of zucchini, about 1/4 of small zucchini, 1/8 in thick slices or smaller.
put chicken breast in zip lock bag, and pound thin (or butterfly cut)
sprinkle chicken with seasonings
mix spinach w/cottage cheese and spread evenly across the 2 pieces of chicken. make a row of zucchini slices, then roll chicken, and place in 10x10 pan
distribute 1 can diced tomatoes around chicken, cover bake 30 minutes, remove cover, put 1/4 cup cheese on each roll, bake 10 minutes more or until browned. slice and serve.
