Ingredients

14 oz. peeled, deveined, raw shrimp
1 c. cherry tomatoes
1/8 C. chopped fresh basil
5 T. olive oil
1/4 c. parmesan
5 oz mozzarella
1/2 small avocado
8 c. mustard greens
Directions
Makes 4 servings
Preheat oven to 375 degrees.
Slice cherry tomatoes in half. Rough chop fresh basil and dice avocado half. Divide diced avocado into fourths.
Arrange shrimp in a single layer on a baking sheet. Reserving room for mustard greens. Drizzle with olive oil. Bake in oven @ 3 minutes. After 3 min. top shrimp in the following order: tomatoes, basil & cheeses.
Place mustard greens around shrimp. Bake for another 5-6 minutes. Do not over wilt mustard greens. They should still have some form when they are done.
To plate: Gently lift mustard greens onto center of plate. Using a spatula transfer 1/4 of the shrimp mixture on top of the greens. Finally garnish with the avocado and a sprig of fresh basil.
Olive oil on the shrimp provides the dressing.
