Ingredients

    1 - Crumpet, Farm Country Brand
    1/8c. - Green Pepper, finely chopped
    1/8c. - Red Pepper, finely chopped
    1 - Morninstar Sausage Pattie, chopped
    1/2c. - Egg Beaters w/ Yolk
    7 grams - Kraft 2% Sharp Cheddar Cheese
    Pinch of Salt to taste

Directions

Prepare Crumpet - place crumpet in center of a 1' square of tin foil, and form foil into a ring around it about 2" high on each side. Remove crumpet and generously coat with Cooking spray. Replace Crumpet. Place in center of medium skillet.

Mix together the rest of the ingredients in bowl and pour over the crumpet.

Add about a 1/2" of water in skillet.

Cook covered on Med Heat with lid tipped to vent steam for about 30 minutes. It will be ready when the egg can be pulled away from the sides of the foil and twist a fork in the center to see if the egg is cooked through.

Remove from skillet and rip the foil from the sides and slide out from the bottom. ENJOY (I DID!).

One thing I learned through trial and error:

THE WATER IS THE MOST IMPORTANT PART. It prevents the crumpets from burning before the egg is done!

Couple things: (None of the stuff listed below is included in the nutritional calculations.)

You could vary this recipe by using egg whites, spinach and artichoke. Or egg beaters, diced ham, pineapple, & cheddar. Or Mushrooms & Potato. The possibilities are endless!


Make more servings by using large muffin pans & setting in a larger pan and add water to that. Cook in oven for about 30 minutes on 325
