Introduction

Rice with beans, bacon and tomatoes. Rice with beans, bacon and tomatoes.
Number of Servings: 16

Ingredients

    1 Large Green or Red Pepper
    1 Medium Onion
    6-8 Slices Bacon
    1 Can (19 fl oz) Diced Tomatoes
    1 Can Condensed Tomato Soup
    1 Can (19 fl oz) Black Beans
    2 Cups Minute Rice
    4-5 Shallots, chopped, for garnish

Directions

Chop the pepper, onion and shallots. Chop bacon and cook according to package directions. Rinse and drain the beans
Combine the diced tomatoes, soup, green pepper, onion and beans. Add the rice and bacon.
Grease a casserole dish and bake at 350 for 30-40 minutes, or until the beans are cooked.
Garnish with green onions.
Makes 16-1/2 cup servings
