Ingredients

    4 skinless chicken thighs
    1 tsp olive oil
    1/2 large onion, sliced
    2 red potatoes, in large chunks
    1 rib celery, in thick slices
    2 tsp fresh thyme, or 1 tsp dried
    1 bay leaf
    1 cup chicken broth
    2 cups frozen or steamed green beans

Directions

In a large skillet saute the onion in the oil until soft. Add the rest of the ingredients except the beans, bring to a boil. Reduce heat to a simmer, cover, and cook for about 30 minutes, until chicken and potatoes are done. Add the green beans and heat through. Serves 2.
