These cookies are like eating an apple crisp! They're a wonderful snack/treat. They're super healthy, too. For those cutting sugar, try with splenda for baking or brown sugar splenda. Ingredients

1 c. brown sugar, packed
.5 c. canola oil
.5 c. unsweetened applesauce
1 T. vanilla extract
1 egg
2 T. milled flax seed
1.5 c. whole wheat flour
.25 t. salt
.5 t. baking soda
.5 t. ground ginger
.5 t. ground nutmeg
1 T. cinnamon
2 c. oats, old-fashioned
1.5 c. apple, diced fine with skin
.25 c. golden raisins
.3 c. craisins
.75 c. chopped pacans, toasted
Directions
Beat sugar, oil, applesauce, and vanilla until well combined. Add egg and mix well. In another bowl, add flax, flour, salt, soda, nutmeg, ginger, and cinnamon; mix well. Gradually add dry ingredients to oil mixture. When combined, stir in oats. Once oats are incorporated, add apples, raisins, cranberries, and pecans.
Bake at 350 for 10-12 minutes for cookies. Makes about 36 good-sized cookies.
For bars, pour into ungreased metal 9x13 baking pan; bake for 30-35 minutes. Cut into squares or bars.
