Ingredients

Cream Cheese, 24 oz (remove)
Egg, fresh, 3 large (remove)
Sour Cream, .5 cup (remove)
Granulated Sugar, .5 cup (remove)
Shortbread Cookies, 28 oz (remove)
Hershey Special Dark Sweet Chocolate Bar, 1 bar, I USE 1 CUP CHIPS YOUR PREFERENCE OF CHOCOLATE (1.45 oz) (remove)
Directions
In a large mixer whip softened cream cheese. Add sugar until well blended and smooth. Add eggs one at a time. Add sour cream. While mixture is whipping (the longer you whip the smoother the cheesecake), combine cookies and chocolate in a food processor until a dough like consistency is achieved. Spread dough evenly on greased springform pan and bake at 350 degrees for 10 minutes, let cool. Pour cheese mixture onto crust and bake for 40-45 minutes or until the middle is set. Enjoy with friends or make mini cheesecakes and freeze for up to three months.
