Introduction

This is a wonderfully light and flavorful dish, serve over a bed of rice or angle hair. This is a wonderfully light and flavorful dish, serve over a bed of rice or angle hair.

Ingredients

    12 oz fresh Mahi Mahi
    Salt (to tast)
    Pepper (to taste)
    Olive oli
    onions
    One Can stewed tomatoes
    garlic
    fresh basil
    mushrooms
    balsamic vinegar

Directions

Makes 4 servings.
Rinse filets and sprinkel with salt and pepper, drizzle balsamic vinegar and let sit for 10 min.

In hot frying pan add oilve oil, onions finely chopped and chopped mushrooms, cook until onions are translucent. Add garlic and cook a few minutes more. Add tomatoes slightly drained and fresh basil, chopped or torn. Stew for a about 5 minutes. Add filets skin side down and cover.
Cook on both sides for about 5 to 7 minutes on med heat, depending on thickness of filets.
Serve over rice or angle hair slighty drizzled with oilve oil.
