Ingredients

    3 cups whole wheat flour
    2 tbs baking powder
    1 tsp salt
    1/2 cup brown sugar
    2 tsp ground ginger
    1 tsp cinnamon
    1/2 tsp ground cloves
    1 cup raisins
    1 cup chopped walnuts or pecans
    1 cup chopped dates
    3 cups 100% bran cereal
    3 cups skim milk
    1/2 cup molasses or 1/4 cup honey
    2 large eggs
    3 tbs peanut oil
    nonstick vegetable spray

Directions

Stir together first 10 ingredients in large mixing bowl
Set aside. In another large bowl stir milk and eggs together, add oil and molasses or honey stir until well blended. Stir in bran cereal let stand for 5 min.
Meanwhile prepare muffin pans spraying with cooking oil or line with baking cups. Pour wet ingredients into bowl with dry ingredients and stir only until all combined and moistened.
Portion the batter evenly into cups.
Bake at 400 degrees for 18-20 min. or test done.
Makes 28-32 muffins.
You may use any dried fruit in place of the dates and raisins, I use blueberries and mixed berries, but omit the cinnamon, ginger and cloves add 1tsp vanilla extract. Make sure to adjust nutrition count accordingly. Enjoy

    Sounds interesting but the nutritional calculation is wrong - there's an extra 1/2 cup of salt, plus some other different ingredients. Can we see the proper nut. info.? - 12/11/08
