Ingredients

    2 cups diced chicken breast
    1 cup diced celery
    .5 cup craisins
    .5 cup slivered almonds
    1 cup instant brown rice
    1 cup low fat cheese
    3 tbsp lemon juice
    .5 cup lowfat mayo
    .5 cup fat free sour cream

Directions

combine all wet ingredients, add in all diced ingredients. add salt and pepper to taste.. about 1/2 tsp of both. bake 350-400 until heated through.
optional: add in any veggies you like, I've used peas before. i serve this on top of lettuce, and also as a sandwich.
