Ingredients

    Fresh Baby Spinach, 4 cups
    Fresh Mushrooms, chopped, 2 cups
    Muir Glen Fire Roasted Tomatoes, 2 cans
    Parmesan Cheese, 1 cup
    Garlic to taste
    Salt and Pepper
    3.5 oz tilapia steaks, 4

Directions

Skillet fry mushrooms in fat free cooking spray until tender, add spinach and garlic. Cook until spinach is tender, but still brightly colored.

Salt and pepper tilapia steaks to taste. Roll the spinach mixture inside the tilapia steaks and place seam side down into baking pan. Cover with tomatoes and parmesan cheese.

Bake 20-25 minutes until fish is flaky.

Serve hot.

    ok. Had to add spices to it .Also sauteed garlic/onion with the spinach to add a little more flavor. Used a low fat cheese instead. - 6/20/10
