Introduction

I really enjoyed this breakfast sausage over store bought. I really enjoyed this breakfast sausage over store bought.
Number of Servings: 4

Ingredients

    1 lb. extra-lean ground pork

    2 tblsp minced red onion

    3 tsp. minced garlic

    1 tsp. dried thyme

    1/2 tsp. ground sage

    1/2 tsp cayenne

    1/2 tsp. ground black pepper

Directions

In a medium mixing bowl, combine the pork, onion, garlic, thyme, sage, cayenne, black pepper. With clean hands or a fork, mix well. Divide the mixture into four equal parts. Shape each into a ball. on a sheet of waxed paper, flatten ane ball into a 4' diameter patty. repeat with all the remaining balls. Place any patties that you won't use immediately in a single layer or stacked with wax paper in between in an air tight container. Refrigerate up to 3 days or freeze up to a month.

Cook in a skillet over medium heat mist with olive oil when it is hot enough for a spritz of water to sizzle on it. Place patties in a single layer cook 1-2 min. per side or unitll just starting to brown and no longer pink in the middle. Serve Immediately.

    This recipe is fabulous. My husband bought a lean pork butt and ground iit. He froze the mixture. We eat it for breakfast and mix it with beef for a great meat loaf - 5/6/10

    This is a really good sausage but I'm looking at the recipe and as far as I can tell and it seems like you doubled the recipe but the number of servings stayed at 4, so it should be 8, so the calories are kind of off, so I guess just half the calories unless you just made that much into 4 patties? - 3/11/10
