Ingredients

    1 cup brown rice
    1/3 cup chopped onion
    1/3 cup chopped bell pepper
    2 tbsp olive oil
    2 cups (approx 1 can) chopped tomatoes
    1 cup water
    1 tsp salt
    1/4 tsp worcestershire sauce
    1/2 tsp yellow mustard
    1 OPTIONAL beef bouillon cube

Directions

suate rice, onion, and pepper in oil until vegetables are tender. Add remaining ingredients and bring to a boil. Once it boils, reduce heat and simmer about 40 minutes (less if using white rice) or until liquid is absorbed. The nutrition info does not include the optional beef bouillon cube which will increase sodium content. Whit rice will increase the calories as well
